I Love To Cook!

My most requested dish is STUFFED BELL PEPPERS.

I never go by a specific recipe for the stuffing! I use different amounts of the ingredients or totally different ingredients from the previous cooking every time.

When I get asked to make them for my mother to take to work, to a Family get together, or a church function, then I write down MY recipe for that batch.

Below is the MOST complemented recipe so far: I hope you will try it and let me know how you like it! (of course you can cut down on the amount of the ingredients to suit your needs, this one was made for a lunch where my mother works)

[I use 4 eggs/lb. of ground beef}

Ingredients:

20 eggs

5lbs Ground Chuck (leaner than regular beef,less grease)

5 tsp Season All seasoned salt

3 tsp Garlic salt

1 tsp Black pepper

5 tsp Hot Sauce

5 tsp Tabasco sauce

3 tsp Dry Mustard

5 cups Pre-cooked rice (I usually cook the rice a day ahead of time)

2 cups Ketchup (or catsup, your choice)

1 large Onion diced

16 Green Bell Peppers ( gutted and Blanched)

Preparation:

Cut the tops off the peppers and dig out the seeds. Wash them out, put in a large boiler of HOT water on the stove.

Pre-heat oven to 400 degrees

In a LARGE mixing bowl, beat the eggs ( I use a wire whisk)

add remaining ingredients and mix well ( I use a big mixing spoon for this step)
By now your peppers should be about ready, you want them tender, but yet firm enough to sit in the pan.If they tear when you take them out of the boiler then you’ll know to shorten the blanching time for the next ones.

Put your peppers in a baking pan. May take two pans, depending on the size of your peppers.

Spoon the stuffing into the peppers. You may have to use your fingers here to pack the pepper. Be careful not to over pack and burst the sides!

You should have some stuffing left over, depending on the size of the peppers used. Just cook it in a baking pan or meatloaf dish, for those that don’t eat Bell peppers.

Place Stuffed peppers and the pan of meat in the oven.

Cook at 400 degrees for 40 minutes
